▪️1 slice of dark rye or farmhouse bread
▪️30 grams of curly kale
▪️½ teaspoon of olive oil
▪️30 grams of smoked salmon
▪️¼ red chilli, finely sliced
Poach the egg in boiling water for around 3 minutes for a runny yolk and 4 minutes if you prefer a harder yolk.
Remove from the water with a slotted spoon and place on kitchen paper to soak up excess water.
Toast the bread and wilt the kale by placing it in a colander and pouring over boiling water.
Drizzle the toast with olive oil and then top with the kale, smoked salmon and poached egg. To add some heat to the dish, scatter over some finely sliced red chilli and serve
